En papillote (foil) salmon



Baking in foil is a very widespread and appreciated technique as it is fat-free, it is in fact a sweet cooking that preserves all the natural properties of the food, enhancing its aroma and taste. In foil you can cook meat and vegetables of all qualities, while as far as fish is concerned, medium and large sizes such as sea bass, trout, sea bream and salmon, but also seafood is preferred. On the other hand, blue fish is not recommended as it is too small and little fat (except for mackerel, and octopus with large squid, because of the tenacious meat that prefers cooking in a pan.) The recommended paper for baking in foil is the classic baking paper or fairy paper (cellophane bags), while aluminum foil is more suitable for cooking on the grill.

Baked salmon is a delicious and inviting second course with an aroma, perfect to bring to the table on special occasions and whenever you want to enjoy a genuine and nutritious dish. Preparing an excellent baked salmon is very simple and takes just a few minutes to do. Its goodness is such that even the little ones like it, especially if accompanied with a fragrant side dish of baked potatoes. IMPORTANT
The foil must be closed softly, without wrapping the food too tightly inside, so as to circulate the air favoring cooking.

Ingredients for 4 people

salmon 800 g rectangular slice of salmon
orange the fresh juice of 1/2 orange
thyme to taste thyme leaves
Salt to taste. fine salt

Preparation

To prepare en papillote salmon at home, we must first deprive the salmon steak of its skin. Once this is done, place it on a long sheet of aluminum foil and season it with a pinch of salt and the fresh juice of half an orange, distributed evenly. Perfume it with a few thyme leaves. Now we just have to close the aluminum foil to form the classic foil which will preserve the aroma and flavor of the fish while cooking in the oven. Place the salmon en papillote inside a baking dish and bake it at 180°C for at least half an hour. At the end of cooking, the fish must be tender and fragrant. Remove the salmon steak from the foil pouch and place it on a serving plate. Let's serve it to our guests still warm and fragrant!
