Blueberry and limoncello cookies



The soft biscuits with fresh blueberries and limoncello are greedy, delicious sweets! Easy and quick to prepare, they are perfect for breakfast in the morning, for tea time at five, or for a snack in the afternoon with an espresso. Everyone will like them, even the little ones. The first time I made them, they disappeared in a few minutes... Maybe because my children are greedy, but also because they really like blueberries (like their mom!). We can prepare soft biscuits with fresh blueberries and limoncello using the Thermomix but also without.

Blueberry and  limoncello biscuits are a rather special preparation, despite the simplicity of its ingredients, because the process for the dough is very similar to that of a crumbled cake and in addition, these cookies have many fresh blueberries in the dough that make them really irresistible!

Ingredients

300 g Flour
125 g Blueberries
100 g Sugar
100 g Sunflower oil
50 g Cornstarch 
8 g Baking powder ( Half sachet)
1 sachet Vanillin
limoncello to taste
1 Eggs
Icing sugar to taste

Preparation 

First take the blueberries and wash well, then let them dry in a pasta drainer. Put the sugar with the limoncello in the jug at speed 8 for 10 seconds. Combine the flour, starch, egg, sunflower oil, half a sachet of yeast, vanillin and limoncello. Operate at speed 4 for 30 seconds. The dough must remain a bit sticky. Take it out of the jug and add the blueberries. Knead for a few minutes with your hands.  In a basin put a little icing sugar. While with a spoon take a little of dough, pass it in sugar and with your hands form a ball. Place on a baking sheet covered with parchment paper, and flatten slightly. Bake in a hot oven at 180°C static for 20-25 minutes. Let them cool on the oven plate, do not move them, otherwise they will break. Once cold you can sprinkle with more icing sugar. The soft cookies with fresh blueberries and limoncello are ready!
