Ingredients
2 kg turnip greens (to be cleaned)
50 ml extra virgin olive oil
2 dried chili peppers
2 garlic cloves
salt to taste
Preparation
Start the preparation by cleaning the turnip greens: leave only the most tender inflorescences and leaves. Keep in mind that the waste is very high, which is why you will need several turnip greens. Once cleaned, wash them under running water and then blanch them for a few minutes in a pot with lightly salted water. As soon as they are slightly wilted, drain. Meanwhile, equip yourself with a pan and heat the oil, add two chopped dried chilies and one or two cloves of garlic passed in the garlic masher, I often use this kitchen accessory because the garlic is uniform and releases all its scent without weighing down the dish. When the oil begins to fry add the boiled turnip greens, season with salt if you deem it necessary and cook for about fifteen minutes or until you think the dish is cooked.
