Penne with tomatoes, ricotta and olives 



Today I present the recipe of penne with cherry tomatoes, ricotta and olives! For a quick and easy first course! The first quick dishes to prepare, without great processing, with few ingredients are the ones I like the most! Of course, I also like to prepare more elaborate recipes, but I am often in a rush and these quick dishes save lunch! The recipe of penne with cherry tomatoes and olives is just one of these. Few ingredients for a dish full of flavor!

With typical Mediterranean aromas. Ideal to be consumed when you want something ready to prepare comfortably in advance, they are made simply by boiling the pasta, draining it al dente and sautéing it briefly in a pan with a sauce of fresh tomatoes and black olives in rounds. All scented with a few basil leaves.

Ingredients

Penne pasta
100 gr of ricotta
a pack of cherry tomatoes
80 gr pitted black olives
80 gr pitted green olives

Preparation

While the pasta is cooking, prepare a sauce with cherry tomatoes, season with salt and add the ricotta mixing well... Almost at the end of cooking, add the olives cut into slices. Drain the pasta and season with the sauce, add a nice sprinkling of Parmesan cheese and...
