Gnocchi alla sorrentina
Gnocchi alla sorrentina are a first course of the Campania tradition.
In particular of Sorrento, from which it takes its name, among the most loved all over the world! It is made with potato gnocchi, first creamed in a pot with tomato sauce, mozzarella and Parmesan cheese and finally transferred to a crock pan, the typical "pignatiello", where they are passed in the oven for a few minutes; and it forms an exquisite crust au gratin and stringy mozzarella that binds the ingredients in a creamy and succulent embrace! Ingredients for 4 people
1 kg of dumplings (potatoes)
400 gr of mozzarella
800 gr of tomato puree
2 tablespoons olive oil (extra virgin)
100 gr of Parmesan cheese (grated)
1 clove of garlic
basil to taste
salt to taste
Preparation
To prepare the gnocchi alla sorrentina start preparing a very simple sauce: heat the oil in a pot with a clove of garlic, then add the tomato puree, season with salt and cook for about 20 minutes; The sauce should be quite thick, without drying out too much. Add a few basil leaves. Prepare the potato gnocchi, then immerse them in plenty of boiling salted water, wait a couple of minutes from when they rise to the surface and take them with a slotted spoon, transferring them to a large bowl. Season with a part of the sauce you have prepared. Take a baking dish and create a layer with 1/3 of the gnocchi, add diced and well-drained mozzarella and Parmesan. Complete the baking dish with the other layers of ingredients. Pass everything in a preheated ventilated oven at 200 °C for 10-15 minutes (for more browning you can set the grill mode in the last minutes). Your gnocchi alla sorrentina are ready, serve them hot!
