Fried calamari
Fried calamari are one of the best known and loved second courses, a great classic of Italian cuisine that is impossible to resist. The squid are cut into rings, passed in a light batter, made from flour and cold sparkling water, then fried in hot oil: the final result is a golden fry, crunchy and super fragrant. A simple recipe and affordable for everyone, as long as you follow the few but fundamental key steps, perfect to serve as an appetizer or part of a rich fried fish together with cuttlefish, shrimp, anchovies, and mullet.
Fried calamari is a tasty second course of fish that everyone likes, in which calamari rings are fried in hot oil with eggs and flour, becoming golden and crispy. They should usually be accompanied with wedges or lemon juice and are really delicious.

Calamari 500 g
Eggs 1
Flour to taste
Extra virgin olive oil to taste
Salt to taste

Preparation
Wash the calamari and clean them from the entrails, hard parts and ink, then cut them into slices and salt them. Prepare two dishes, in one pour the flour while in the other break the egg and beat it. Pass the calamari inside the flour and then inside the egg and one last time in the flour. Fry the calamari in hot oil until golden brown. Remove the excess oil by placing the fried calamari on a sheet of kitchen paper and then serve hot after sprinkling them with lemon.
