Egg stuffed meatballs

Procedure
To prepare the meatballs with boiled egg, start by cooking the eggs. Put them in a saucepan, cover with water and cook for 4 minutes from the boil. Then cool them under running water and peel them.Separately, in a bowl, mix the meat with the bread soaked in milk and squeezed, Parmesan, chopped parsley, a pinch of salt and eggs to obtain a homogeneous mixture. Then add one or two tablespoons of breadcrumbs to obtain a consistency that can be worked with your hands. Take a tablespoon of the mixture, lay it on the palm of your hand and form a hole in the center. Insert the hard-boiled egg and cover it well. Give the meatball a long shape to pass it in breadcrumbs. Once the mixture is finished, fry the meatballs in a finger of oil, turning them often so as to prevent them from burning. Drain on a sheet of absorbent paper and serve immediately.
RecommendationsIf you want, you can customize the meat with aromatic herbs or spices. Also, if you want a super crunchy result, after passing the eggs in the breadcrumbs let them do another round of breading.
