Chicken and potatoes

Baked chicken and potatoes are a classic second course of Italian cuisine, but appreciated by everyone, young and old. A perfect dish for the classic Sunday lunch or a family celebration. Preparing baked chicken with potatoes is very simple, just follow some small precautions to get a soft and juicy meat inside, irresistibly crunchy on the outside and to be accompanied with a side of golden potatoes.
Ingredients
1 kg chicken (in pieces)
1 kg potatoes (yellow flesh)
2 garlic cloves
salt to taste
black pepper to taste
1 spring of rosemary
1 pinch dried oregano
extra virgin olive oil to taste
Half a glass of white wine
Procedure
To prepare the CHICKEN AND CRISPY BAKED POTATOES start from the clamping of the chicken: then put the chicken in pieces in a large bowl, add the chopped rosemary, plenty of oregano, 1 clove of garlic cut in half and without peel, a pinch of black pepper, white wine and 4 tablespoons of extra virgin olive oil. Mix the chicken in the dressings and massage it with your hands to absorb all the aromas at best. Cover the bowl and let it flavor for about an hour. (If you are in a hurry even half an hour, but no less, grinding is very important!). Preheat the oven to 200°C. Then prepare the potatoes: peel them with a potato peeler, cut them in half and then into cubes not too small, and wash them under running water. Put a pot with plenty of water on the gas and as soon as it comes to a boil pour the diced potatoes. Let them cook exactly 5 minutes, no more! Drain and transfer to a bowl. Season with a drizzle of olive oil, a clove of garlic peeled and cut in half, salt, black pepper and chopped rosemary. Mix well. Lightly oil a large baking dish, arrange the pieces of chicken and then pour the seasoned potatoes. Bake immediately and cook at 200 degrees C for about 30 minutes, turning the pieces of chicken halfway through cooking. Remove the garlic cloves and immediately serve the crispy chicken and baked potatoes!
