Cabbage + beans + rice = minestrone



Today I propose another nice healthy and genuine recipe, it is prepared in no time and is really tasty. The cabbage and bean soup with rice pattern is one of the many soups that can be made in winter. Usually you open the fridge and what you have of vegetables ends up in the pot to cook a soup. This time I had in addition to the smells a little savoy cabbage and boiled beans. This is the basis for this soup. In addition to vegetables I added a bag of rice and lentil mix that I found at the supermarket, they are usually suitable for cold salads, but I wanted to try the hot version and the result was super! Really really good. The mix of rice (basmati, Thai and whole red red) that were present in the bag gave the soup a very unique flavor, even tastier than I thought.

I advise you to cook it too, you will bring to the table an original and tasty soup!

Ingredients

1onion
1 clove Garlic
1 Carrot
1 Celery rib
1 clove Savoy cabbage
5 tablespoons boiled cannellini beans 
2 tablespoons Tomato puree
250 g Delicious rice 
Salt to taste
Extra virgin olive oil to taste
1 l Broth 

Preparation

In a wide and high saucepan put a little olive oil. Add the diced onion, the chopped garlic clove, the carrot and the celery cut into small pieces. Sauté for a few minutes. Meanwhile, cut the savoy cabbage into strips, then add it to the base of odors. Cook a few more minutes, stirring with a ladle. After this time, add the previously boiled beans and the tomato puree to the soup. Mix everything and cook for 5 minutes over low heat. Season with salt. Wet the vegetables with hot broth. Initially put a half by cooking the vegetables for 10 – 15 minutes. Add more liquid as soon as you see that it dries too much.
When the vegetables are still crispy (about half of their cooking) pour the rice content of the bag into the pot. Add water if necessary and let it boil until everything is well cooked. It usually takes 10 – 15 minutes, follow the times indicated in the envelope.

Serve the soup hot with grated cheese to taste.


Notes
It is a healthy and balanced dish thanks to the correct composition of legumes and cereals present. The attention to the quality of the raw materials used makes the difference both from a nutritional point of view and from a practical point of view, in fact, in addition to being balanced and healthy meals, all the ingredients are cooked homogeneously and the cooking times are precise. They can be used in a very versatile way: for cold salads, side dishes or first courses or even soups.
