Caesar Salad topped with grilled chicken
The Caesar salad with chicken – light version is a tasty salad of Mexican origin, or rather Italian-American. The recipe was created by the chef Cesare Cardini, hence the name of the dish "Caesar", created for the American National Independence Day on July 4th. It is a very fresh salad, like romaine lettuce with a green and wide leaf, enriched with golden bread croutons, shavings of Parmesan cheese (Grana Padano is also fine), grilled chicken breast and is seasoned with a sauce based on garlic, lemon juice and Worcestershire sauce. In the original recipe there is no meat and the sauce is prepared with the addition of eggs.
Ingredients
800 g Romaine lettuce
400 g Chicken breast
140 g White bread
Grana Padano to taste
Extra virgin olive oil to taste
For the sauce
2 cloves Fresh garlic
Lemon juice to taste
Worcestershire sauce to taste
Extra virgin olive oil to taste
Fine salt to taste
Black pepper to taste
Preparation
To prepare the Caesar salad with chicken – light version first clean the salad, removing the final hard part of the head, wash it in a basin, remove excess water by putting it in the centrifuge then cut the leaves into smaller pieces. Then you can already distribute the salad divided into practical portions in several bowls or on fairly large plates. Now prepare the croutons. Take the bread and cut it into cubes then sauté them in a hot pan with extra virgin olive oil and a pinch of salt. Once ready, pour them over the salad. They must be crispy and golden. Finally, cook the chicken breasts on a grill, grilling them well on both sides. Once cooked, cut them into strips, add them to the salad together with the shavings of Grana Padano or Parmigiano Reggiano. Serve the salad dressed with the sauce and enjoy your meal!

Tasting notes
I let it decant for over an hour & this wine really had a WOW factor when tasted. This wine had aromas of earth, herbs & vanilla and on the palate this wine had a hint of sweetness to it with notes of chocolate & vanilla. This was a great bottle of wine with an incredible body & finish. Would definitely purchase this wine again in the future.
