Tortellini with cheese and orange, herb butter and asparagus
Veneto is one of the regions with the greatest traditions in terms of asparagus. Which are used for recipes of all kinds! About this fact that "tastes are not discussed" it is curious to note that the phrase originates precisely with asparagus. It seems that the great biographer Plutarch attributed it to Julius Caesar. Who, when he was still governor of the Cisalpine (around 57 BC), one day went with his officers for lunch with a rich and influential Milanese notable. Pasta with asparagus had not yet been invented, but a hearty plate of asparagus with butter was served between the courses. Caesar's officers, in other ways great admirers of asparagus, did not like it. In fact, they were not used to butter, which they used only as an ointment and considered a "barbaric" food. Embarrassing comments followed, which Caesar put an end to by silencing his officers with a dry "enough so: de gustibus non disputandum est".
Ingredients
300 g of flour
00 3 eggs
200 g of ricotta
200 g cheese
1 orange
400 g of asparagus
80 g of butter
1 bunch of rosemary, sage and thyme

Preparation
For the dough: work the flour with the eggs until the mixture is smooth and homogeneous, wrap in plastic wrap and let stand for an hour. Work the ricotta season with salt, pepper and add the grated orange zest. Clean the asparagus, cut them into small pieces and cook in a pan with half the butter, salt and pepper. Roll out the 2 mm thick dough, lay piles of cheese filling, cover with another layer of dough and form the tortellini.
