MorĂ³pio Amarone della Valpolicella Classico

Naxes from 50-year-old plants placed in a vineyard of 2.2 hectares located in Marano di Valpolicella on hilly terrain at 350 meters above sea level facing south-east. The Antolini have always adopted the classic Veronese pergola training which, if left to itself, is able to produce considerable quantities of grapes, but carefully followed and oriented to low productions has the advantage of excellent management of leaf cover and sun exposure of the bunches. The harvest is late, between late September and mid-October depending on the vintage and the varieties, which in this case are the classic corvina, corvinone, rondinella and small quantities of molinara.
During the harvest a careful selection of the best bunches is made (about 50% of the vineyard production), which are left to dry on racks in suitable and ventilated environments for 3-4 months.

Between December and January, the dried grapes are crushed with a machine for separating the grapes from the stems; followed by cold maceration for 7/10 days, fermentation with indigenous yeasts for 20 days in steel tanks at controlled temperature and automatic cap breaking system; During the cycle, as required, one or two pumping over to the air is carried out.

The wine ages 24 months in oak, cherry, chestnut and partly mulberry barrels, followed by aging in bottle for about a year. Despite the hot vintage and the drying, the alcohol content has remained around 16 degrees, this Amarone is savored without perceiving alcoholic excesses or overripening of the fruit, thanks also to a vibrant acidity that hides the slight residual sugar. There are no concentrations of color, which stands on a beautiful lively ruby and not impenetrable, while the aromas range on notes of black cherry and sour cherry jam, china, chocolate, cardamom, honeydew, pickled olives, roots and a hint of bitter orange.

Fresh and juicy mouth, great drinkability, which is rare for this type, the sip flows without weighing down and refers to the ripe fruit but always well supported by acidity. An excellent 2017 that confirms the corporate style, always aimed at giving priority to pleasantness and drinkability rather than opulence and concentration.
