Grilled Wings with Chili-Garlic Sauce
Mexican chicken wings are an easy and tasty second course, a spicy dish typical of Mexican cuisine that can often be enjoyed in pubs, along with accompanying sauces. The preparation is simple and fast, just wait for the marinating times: the chicken wings will in fact be flavored in a mix of Tabasco, chili, spicy paprika, extra virgin olive oil, salt and pepper, before being baked in the oven for about twenty minutes. Once ready, bring them to the table accompanied with salad or potatoes or serve them with white rice, thus creating a delicious and original first course. Ingredient
CHICKEN WINGS 1 Kg
EXTRA VIRGIN OLIVE OIL 3-4 tablespoons
CHILI POWDER 10 gr
STRONG PAPRIKA 10 gr
TABASCO 1 tablespoon
FINE SALT to taste
GROUND BLACK PEPPER to taste
Method
Clean the chicken wings: in the presence of any hair or feather residues, remove them with tweezers or pass them quickly on the gas flame. Wash the chicken wings and dab them with kitchen paper. Now prepare the marinade: put in a bowl the extra virgin olive oil, Tabasco, paprika, chili, salt and pepper, then mix. Put the fins in a large bowl, add the marinade and cover with plastic wrap. Keep refrigerated for at least 2 hours. After the necessary time, transfer the chicken wings to a baking sheet lined with parchment paper and bake in a preheated oven at 200 ° C for about 20 minutes. Recommendations
You can cook the Mexican chicken wings in a pan, if you prefer, although baking in the oven is certainly preferable: it guarantees a more homogeneous browning and there is no risk that the seasoning burns during cooking. Alternatively, you can also prepare the Mexican chicken wings on the barbecue or on the grill: drain them from the marinade and cook them for about a quarter of an hour turning them from time to time. The marinade mix can also be enriched with coriander, cumin, chopped garlic and with the aromatic herbs and spices you prefer, according to your personal tastes.
Preservation
It is advisable to consume Mexican chicken wings immediately after preparation. If they are left, you can store them in the refrigerator for 1 day, inside an airtight container.
