Eggs in purgatory
Eggs in purgatory are a very simple and quick recipe to prepare, ideal when you have little time to cook or in any case you want to make a different dish than usual! Ancient recipe of the city of Naples, where they are called eggs ''m'priatorio'' because the white of the eggs in the middle of the red of the tomato, recalls the memory of some sacred images present in the votive shrines, where the souls wrapped in flames are represented by diaphanous white forms.
Eggs in purgatory are a tasty, easy and cheap dish to prepare. The origins of this recipe are Neapolitan and to prepare them you will only need 10 minutes. You may wonder why this dish made with eggs and tomato has such a strange name. Having Neapolitan origins, in dialect this dish takes the name of "ova m'priatorio" and were so called because they wanted to make it clear how the egg white in contrast with the tomato looked like the souls of Purgatory wrapped in flames. As a good Ciociaro that I am, I cooked the tomato with chili and I can tell you that this makes them even more delicious. Curious to find out how to prepare the recipe of my new goodness?
Ingredients
8 large eggs
400 g Tomato pulp
1 small Onions
1 clove Garlic
1 sprig Parsley
Extra virgin olive oil to taste
2-3 pinches Fine salt
Black pepper to taste
Preparation
Pour a generous drizzle of extra virgin olive oil into a large non-stick pan and fry the garlic clove gently. Once golden, remove it, and fry the onion. As soon as it browns, add the tomato pulp, season with salt and let it simmer for about ten minutes. When the sauce is cooked (do not make it tighten too much, maybe add a little water in cooking) with a wooden ladle form holes, openings. Break one egg at a time and gently pour it into each opening. Always use fresh organic eggs!
Cook over low heat with the lid for a few minutes, the clear must clump completely, while the yolk must remain soft exactly like a fried egg, then check the cooking so as to avoid overcooking the egg red. At the end of cooking, sprinkle with pepper or chili. Serve the eggs in purgatory very hot and I recommend, do not forget the bread for the inevitable ''scarpetta''.
