Athena salad 



This feta and fig salad.... I propose it again with pears..., and as we say here... "Don't let the farmer know how good cheese with pears is"... and if we pour a drizzle of dressing on it, then it will be the maximum. Savor the delicious Mediterranean flavors combined with all the health benefits. 👍🏻 Fresh dish, healthy with a sweet and crunchy tone.

Athena Salad is a powerhouse of flavor, texture and sophistication, it’s my revamp of the classic Caesar salad, but as I believe you should not mess with classics, I have renamed it the Athena Salad, after the Greek Goddess of wisdom, courage and inspiration. It’s a fantastic combination of rich haloumi, sweet roasted red peppers, crunchy cucumbers and caper packed with dressing. Enjoy.

Ingredients

1/2 cup Wine Vinegar
1/4 cup Extra Virgin Olive Oil
1 teaspoon Oregano (dried)
2 Cucumbers (coarsely cubed)
2 Whole Tomatoes (coarsely chopped)
1 Onion (small or 1/2 large) (coarsely chopped)
1/2 cup Greek Olives (Pitting the olives makes a better salad, but traditionally not pitted)
Salt & Pepper (to taste)
8oz Feta Cheese (crumbled)

Directions

Combine vinegar, olive oil and oregano in a bowl. Add the chopped vegetables and olives and toss to coat all ingredients. Salt and pepper to taste. Serve with Feta cheese on the side or toss in the feta just before serving.
