Sausage & Broccoli 



Often the solutions to our problems, in the kitchen, are closer than we think. What to prepare tonight for dinner? What could be done to make a good and healthy single dish for the whole family? In this case the solution is really simple and only two ingredients are enough, broccoli and sausage. If your family does not like vegetables, this recipe is also the ideal trick to turn it into something really inviting: the sauce of the sausage cooked in white wine will in fact give the broccoli a particularly delicious flavor.

It is one of the typical dishes of the Mediterranean Diet, with an irresistible taste. The aroma of this dish encourages you to eat it immediately, especially if you have homemade bread at hand. In ancient times, in fact, this was the period in which the two main ingredients were most easily available: both turnip tops because it is a winter vegetable, and sausage since in January the pig was killed in all the houses. The sandwich version, then, was typical of holidays and still today is an excellent street food.

INGREDIENTS

1 kg turnip greens broccoli
2 sausages
1 clove of garlic
1 chili pepper
50 ml extra virgin olive oil
2 pinch of salt

GUIDELINES

Peel and wash the turnip tops broccoli. In a pan, lightly fry the garlic and chili pepper with 50ml of oil. Put the whole sausages and brown both sides over moderate heat, then remove the garlic. Put the broccoli, salt and cover with the lid, lower the heat and cook for 15 minutes. Turn around from time to time, to ensure that they cook uniformly and do not burn. The broccoli will be ready when it is compact and dark green in color. Taste and season with salt.
