Sift the flour. Dissolve the brewer's yeast in warm milk in a bowl, incorporate 50 g of flour and sugar, mix, cover with a cloth and let the mixture rise for 30 minutes. Pour the flour left on the work surface, form a hollow in the center and arrange the dough, 150 ml of warm water, 2-3 tablespoons of oil and sprinkle 1 teaspoon of salt on the outer edge. Knead the ingredients energetically for at least 5 minutes, until you get a soft and elastic paste. Grease it with a little oil and put it in a bowl covered with a cloth to rise for about 2 hours in a warm place. Meanwhile, sauté the finely sliced onions in a pan with a little oil, 100 ml of white wine, bay leaf and a pinch of salt for about 15 minutes, stirring occasionally, and adding a little hot water if the bottom dries too much, until they are soft. Adjust salt and pepper and eliminate bay leaf. Cut the sausage lengthwise, shell and brown it for 2-3 minutes over high heat in a fat-free pan. Deglaze with 100 ml of wine and let it evaporate. Drain the sausage on overlapping sheets of kitchen paper towels. Divide the dough in half, roll it out with your hands into 2 baking trays of about 26 cm in diameter greased with a little oil and let it rest for another 30 minutes. Divide the tomato pulp on the pizzas, add the mozzarella cut into well-drained slices, distribute the onion and then the sausage on top, drizzle with a little oil and bake in a preheated oven at 230 C degrees for about 20-25 minutes.
