Lemon Berry Trifle
The trifle is a spoon dessert typical of the English tradition, very greedy, ideal to serve as a dessert at the end of lunch. There are different alcoholic and non-alcoholic versions, it is generally prepared with a base of sponge cake or sponge or ladyfingers, cream and fruit. All ingredients are then assembled in layers in a large transparent glass cup. Different recipes available but when I saw the trifle where the main ingredient was lemon I did not hesitate in choosing, it was love at first sight! And here is my "lemon and berry trifle". Compared to the original recipe I varied a little bit because I do not like too alcoholic desserts. Given the this period I would say perfect to bring to the table after the big lunch because it tastes very fresh, light and at the same time very greedy! You can prepare it the day before even in single-portion glasses and then decorate it, you will see you will make a great impression!
Ingredients
2 cups heavy whipping cream
2 cups of milk
2 (3.4 ounce) packages instant lemon pudding mix
2 tablespoons lemon juice
2 cups heavy whipping cream
¾ cup confectioners’ sugar
1 dash vanilla extract
1 (9 inches) ladyfingers, cubed
3 cups sliced fresh strawberries
2 cups fresh blueberries
Directions
In a large mixing bowl, add in 2 cups of whipping cream, lemon pudding mixes, lemon juice, and milk. Whisk until well mixed and the texture becomes smooth. Cover with plastic wrap and place inside the fridge for at least 1 hour or until set. In another large mixing bowl, add in the rest of the whipping cream. Beat until well mixed and bubbly. Slowly add vanilla extract and confectioners’ sugar and beat until well mixed. Whisk upright for the whipped cream to form sharp peaks. Arrange 1/2 of the ladyfingers into a trifle bowl. Place a layer about 1/2 of the lemon pudding, 1/2 of the strawberries, and 1/2 of the blueberries on top of the cake layer. Top the blueberries with 1/2 of the whipped cream. Repeat this procedure until all the ingredients are arranged in layers. Cover with plastic wrap and place inside the fridge until set.
