Chicken escalopes alla valdostana 



The Aosta Valley chicken escalopes are a simple second course, quick to prepare but really irresistible! It starts with thin slices of chicken that are enriched with slices of prosciutto and cheese. The result is a tasty, creamy and stringy dish, perfect for many different occasions but also for a family evening.

Ingredients

8 slices of chicken
8 slices of cooked prosciutto
8 slices of provolone
extra virgin olive oil to taste
flour to taste 
salt to taste
parsley to taste

Preparation

To start the preparation of chicken escalopes alla valdostana you have to start from the chicken slices that should not be too thick. If they are, beat them with a special meat mallet so as to thin them well and allow a more uniform cooking, even inside. Arrange the flour on a plate and pass the chicken slices in the flour beating well with your hands so that the entire surface is sprinkled. In a pan heat a little extra virgin olive oil and add the slices of chicken so as to brown them on both sides. Season with salt and then add the prosciutto and cheese over each slice. Then lower the heat and continue cooking for a few more minutes so that the result is really perfect. When the cheese has melted to perfection you just have to turn off the heat and serve your guests with a little parsley that you have finely chopped with a knife.

Tip
It is important to pay attention to the thickness to have a truly perfect result and a homogeneous cooking. You can replace the cooked prosciutto with speck or prosciutto, if you prefer, as well as you can use fontina cheese or smoked scamorza instead of provolone. The result will be even more intense and good.
