Beef stew with potatoes/Spezzatino di manzo con patate

With a stew with potatoes, success is always assured. It can be prepared with veal stew, pork stew or as in this case with beef stew. The result is a rich, tasty dish that will conquer everyone. The beef stew with rosemary fragranced potatoes is a typical second course of the cold season. It is an easy to prepare dish and goes very well with soft, roasted polenta or with creamy mashed potatoes!

Ingredients

500 g Beef
400 g Potatoes
200 ml Tomato puree
1 onion
1 tablespoon Tomato paste
1 glass White wine
1 clove Garlic
 Rosemary to taste
 Extra virgin olive oil to taste
salt and pepper to taste
1 celery stalk

Preparation

Start the preparation of beef stew with potatoes by cutting the meat into small pieces not too large. Place the meat in a large pot with a drizzle of extra virgin olive oil, the onion and the celery stalk finely chopped. Add the clove of garlic and brown well until the meat creates a crust then blend with the glass of white wine. When the alcohol has evaporated, add the tomato and the concentrate diluted in a glass of hot water. Cook over medium-low heat for at least 25 minutes with the lid closed, stirring occasionally. Meanwhile, wash the potatoes and peel them, cut them into pieces not too large and insert them into the pan with the beef and tomato. Add the rosemary and hot water if necessary. Cook the beef stew with potatoes until the tubers are soft, then season with salt and pepper. Let it cool for a few minutes at room temperature before serving the beef stew with potatoes to your guests. 

Serve the Stew with potatoes with hot garlic croutons.
