Tortellini with peas, prosciutto and a splash of Gorgonzola
Tortellini with gorgonzola, prosciutto and peas are one of the most loved and cooked pasta dishes throughout Italy. For the shape, the flavor and the possibility of filling them with various ingredients, tortellini are always considered an "important" type of pasta, to be proposed during the holidays. The combination of gorgonzola, prosciutto and peas is one of the most famous condiments that is prepared in a few minutes and that allows you to bring to the table a simple but very tasty dish, perfect for an improvised dinner with friends.
INGREDIENTS
150g sliced prosciutto
100 g pre-cooked peas
A knob of butter
500 g tortellini with meat filling
20 g gorgonzola
salt to taste
black pepper to taste
grated Parmesan cheese to taste
Preparation
Procedure Cook the tortellini with meat in salted water. Meanwhile, melt the knob of butter in a pan, then add the diced prosciutto and brown slightly. Then add the peas and cook for about 5 minutes with a little water. Add the gorgonzola, salt and pepper and mix gently with a wooden spoon. Try not to evaporate all the liquid, alternatively add a little' cooking water of the tortellini. When the tortellini reach the desired cooking point, pour them into the pan with the gorgonzola and prosciutto. Let them mix well for a few minutes. A few seconds before turning off the heat, grate the Parmesan cheese on the tortellini and give a last stir.
Serve the tortellini hot!
