Tortellini with cream and prosciutto

Tortellini with cream and prosciutto is an excellent first course of the Emilian culinary tradition. A really tasty dish, simple and quick to prepare. A dish that can be prepared when you have little time available, but that always makes its good impression. Tortellini with cream and  prosciutto are one of the little joys of life. They are perfect when you have little, indeed very little time available to prepare a lunch or dinner, they are tasty and very simple to do. But on the positive side there is also that they are delicious, everyone always likes them and this is why at home I always try to have the necessary ingredients available to make them.

Ingredients    

400 g Tortellini 
200 g prosciutto diced
40 g butter
1 tablespoon Extra virgin olive oil
1/2 onion
1 pack Cooking cream
grated Parmesan cheese to taste
Nutmeg to taste
Salt to taste
Pepper to taste
Sage, parsley or basil to taste

Procedure

In a large pan add 1 tablespoon of oil, butter and melt. When it is melted, add the finely chopped onion and brown it gently, then add the diced prosciutto, salt and brown the prosciutto for a few minutes. Add half the cream and mix well and cook for 5 minutes over moderate heat, drain the tortellini and put them in the pan also pouring the other half of the cream, pepper, nutmeg and a little grated Parmesan cheese, then mix everything stirring well, serve the dish with a little' fresh sage, parsley or basil if you prefer.
