Spaghetti with tomatoes and basil
Spaghetti with cherry tomatoes and basil are a first course that I cook many times. It is in fact an easy and quick dish to prepare. Just a handful of cherry tomatoes and a few basil leaves, a few minutes of cooking and the sauce (to be prepared strictly while cooking pasta) is ready. These are the dishes that I prefer precisely because few ingredients are needed and within everyone's reach, very fast cooking and the result is a dish that in its taste has nothing to envy to more complicated dishes and rich in ingredients. In short, when you have little time to devote to the kitchen, but you do not want to give up taste, this is the ideal dish!
You can use any shape of pasta, but the king of this dish is spaghetti!
Ingredients for 4 people:
350 g spaghetti
200-300 g cherry tomatoes
1 clove of garlic
extra virgin olive oil to taste (or one teaspoon per person)
fresh basil to taste
1 chili pepper
salt
Prepare the Spaghetti with cherry tomatoes and basil by cleaning the cherry tomatoes and cutting them in half. Heat the olive oil in a large pan, add the clove of garlic and a chopped chili pepper and let it brown, then add the cherry tomatoes and cook over medium heat for 10-15 minutes, leaving everything to flavor well. At the end of cooking, season with salt and add a few chopped basil leaves. Meanwhile, boil the spaghetti in salted water, drain and pour into the pan with the prepared cherry tomato sauce. Let them sauté for a few minutes, possibly adding a little spaghetti cooking water. Serve the Spaghetti with cherry tomatoes and basil.
Notes:
You can make a lighter version of this dish using one teaspoon of oil per person. This spaghetti dish with cherry tomatoes and basil is a basic recipe that you can decide to enrich with many other ingredients, for example with tuna, capers, olives or even with smoked bacon. And if you stir the spaghetti with grated pecorino cheese and Parmesan you can get an excellent Pasta allo scarpariello 😉
