Spaghetti aglio olio peperoncino e tartufo 



The famous aglio, olio e peperoncino is well known and loved all over the world. Extremely easy to make, provided the dish is not getting over-complicated with too many ingredients. Aglio, olio e peperoncino literally means garlic, oil and chili pepper for that reason. This Pasta con Tartufo recipe takes some liberties with an Italian classic by adding Truffles and a small amount of garlic, oil and chili pepper. Purists will likely denounce this variation of the Italian classic, with the addition of Truffles…

Do not be tempted to use truffle oil for this recipe, rather use the best truffle you can find (or afford). My source, and pocket, was limited to the jar of Black Truffles in Oil, but if you have access to fresh White Truffle, go ahead and be decadent. Spaghetti garlic oil and chili pepper with tartufo – here lunch is almost always composed of a good first course and a side dish. So every day at lunch I have to experience something new and good. This first course is really simple and very tasty one of those dishes that you can prepare in no time during the cooking time of pasta!

Ingredients

1 400g pack Spaghetti
½ cup extra virgin olive oil, plus extra for the sauce
3 garlic cloves, finely sliced
2 small red dried chilis, finely sliced
½ cup roughly chopped flat-leaf parsley
Cracked black pepper & salt
100g parmesan, grated
1 fresh small black truffle, finely chopped

Method

Cook pasta as per packet directions. When the pasta is almost al dente, heat ½ cup of olive oil in a large frying pan and sauté the garlic and chili. When the garlic turns nut-brown, remove and add ½ cup of hot pasta water. Remove from the heat while you drain the pasta.
Return the pan to high heat and add the pasta, parsley and a little more olive oil. Keep tossing the pasta. Season to taste with salt and a good amount of cracked black pepper. Sprinkle with parmesan and finish with truffle over the top.

Spaghetti with black truffle is a great dish, perfect to make when we want to make a good impression at the table. The characteristic flavor of the black truffle in fact conquers even the most demanding palates.
