SLICED ROCKET AND VERY TENDER PARMESAN



The TAGLIATA RUCOLA E GRANA is a hearty second course, very easy to prepare and that will make you look great if you have guests for dinner or lunch. I will give you many small but important tips to ensure that the meat is tender and not stringy so as to be inedible. After all, they are small precautions that must always be taken, especially if you do not have the grill available but a simple plate for cooking on the gas. I love it, we often indulge in it on the weekend especially if the meat is the one I prefer, with few nerves and very lean. Seasoned with extra virgin olive oil, rocket, parmesan flakes and some cherry tomatoes, fabulous sliced beef. Now you just have to read the recipe, let me know if you will try it.

Ingredients

400 g beef sirloin (or entrecote)
30 g Rocket
100 g cherry tomatoes
30 g grain
Extra virgin olive oil to taste
Fine salt to taste
Black pepper to taste

Preparation

To prepare the cut rocket and parmesan first remember to leave the meat at room temperature for an hour before cooking it. Heat a cast iron plate on the stove. When it is hot, place the slices of beef (if you buy a larger piece, cook it at once without cutting it first). DO NOT add salt during cooking, salt tends to harden the meat during cooking. Always add it at the end of cooking. DO NOT shore up or prick the meat during cooking, turn it gently. The leakage of blood will not allow the meat to be tender. The meat will have to cook a few minutes per side, obviously it depends on the thickness of your piece and how much blood you like. The cut should be served to the blood, well cooked outside. Transfer the cut to a cutting board, slice it with a sharp knife. Prepare the rocket, the cherry tomatoes cut into 4 parts and, aside, the parmesan cheese flakes on a serving plate. Place the cut on the plate, season with salt, pepper and olive oil. Serve at the moment.

Advice
If you do not like cooking to the blood but prefer a medium cooking you can slice it after a few minutes and cook the individual pieces, it takes very few minutes (if not seconds).
