500 g of cod fillet 200 g of sauced tomatoes1 white onion dried chili pepper extra virgin olive oil tufts of fennel
Procedure
Desalt the cod fillets in water, changing it twice a day, for 3 days. Finely chop the onion and brown it in a pan with 1 tablespoon of oil, add the tomatoes, a pinch of chilli and cook for about 15 minutes without lid. Heat for 5 minutes a non-stick pan insert the cod fillet on the side of the skin and roast for 4 minutes. When cooked, the skin will come off. Serve the sauce, the cod fillet and finish with its crunchy skin, a sprig of fennel and a round of extra virgin olive oil.
