DOLCI DI NOCI (WALNUT COOKIES)
This is the first recipe that I am sharing with you. It has become one of my favorite cookies and it couldn’t be more simple to make. Can you think of any other cookie that has only three ingredients? It is so good that anybody that has one wants more and more. I discovered this simple cookie, called “Dolci di Noci” in Maratea, Basilicata. This charming little town is right at the border of Calabria. When I was a young child and we used to go to Maratea I used to think that it was in Calabria.
Back to the cookies, there are only three ingredients in this cookie: walnuts, sugar and one egg. That’s it! It takes just a few minutes to make them and in less than 30 minutes you can have a batch ready for your family and friends to enjoy. They are a tasty snack to offer children for a snack or after physical activity, or to enjoy after a dinner with friends: one leads to another! Thanks to the presence of walnuts they are a healthy and energetic sweet. In fact, walnuts, like all dried fruit, contain many important nutrients for our health, and are rich in antioxidants, such as vitamin E and mineral salts.
Walnut cookies can also be prepared for the Christmas holidays, they are also perfect to give, as long as you do not finish them freshly baked!

Ingredients for 6 people
150 g of granulated sugar1 eggwalnuts 240 g (already shelled)
Preparation
First we shell and finely chop the walnuts with the help of a mixer. Then transfer them to a bowl and add the granulated sugar and an egg. With a spatula, or a spoon, mix the mixture well, which will be quite moist and compact. Take a little dough at a time and, working it with your hands, form balls and flatten them slightly. Place the biscuits on a baking tray lined with parchment paper and cook in a preheated convection oven at 180° for about 10 minutes; if you use the static oven, extend the cooking by about 5 minutes. Alternatively, to make crunchier treats, roll the balls first in the granulated sugar and then in the icing sugar. As before, arrange the biscuits on a baking sheet and always cook at 180° for about 10-15 minutes.
