Broccoli Rabe pizza
Simplicity always wins, what's simpler than a pizza, a good homemade pizza, as good as in the best pizzerias, my favorite, pizza with broccoli rabe. The pizza dough is the classic one with little brewer's yeast and long leavening, which makes the dough light. The seasoning, well this time I wanted to enjoy in purity the broccoli rabe, and sausage as I usually do, and seasoned with fresh mozzarella.
I love them, so I thought I'd give you the traditional Calabrian recipe, broccoli rabe with spicy Calabrian sausage prepared with lots of chili and wild fennel seeds, a delight, then put together the drowned broccoli rabe, an ultra sensory journey. Its strong taste, the scent that emanates the freshly baked pizza, has no equal.
How I like pizza! I would also eat it every day, and I always like to prepare it in a different way, to the delight of my family, but also of the faithful readers of this Blog.
Ingredients
350 grams of flour
150 grams of semolina flour
12 grams of brewer's yeast
3 tablespoons of mashed potatoes
250 ml of warm water
2 tablespoons of extra virgin olive oil
a teaspoon of salt
For the dressing
300 grams of broccoli rabe
200 grams of fresh sausage
200 grams of mozzarella
250 grams of peeled tomatoes
extra virgin olive oil
salt
Preparation
In my dough I add a little bit of mashed potatoes that makes the dough soft and light, but if you prefer you can omit it. Prepare the dough by hand or with a mixer: dissolve the brewer's yeast in warm water, add the mashed potatoes and flour, little by little. Continue adding the oil and only finally the salt. Knead well, until the mixture is soft and slightly sticky. Put it in a floured bowl, cover it with a cloth and let it rise in a warm place (inside the oven off with the light on) for about 2 hours. Meanwhile, clean the broccoli rabe, wash and blanch them in salted water for 6-7 minutes. Cut the sausage into small pieces and fry it in a pan for a few minutes, add the broccoli rabe, stir and turn off the heat. Take the dough and roll it out in a large oiled rectangular baking pan or, if you prefer, in 2 round pizza plates. Season the pizza with peeled tomatoes in small pieces and the sausage with broccoli rabe; Salt lightly and let rise for 40 minutes. Preheat the oven to 230°, oil the soft pizza with broccoli rabe and let it cook in a ventilated oven for 8 minutes. Remove it from the oven, cover it with the slices of mozzarella and bake for another 2-3 minutes.
