Bread and eggplant lasagna
The Lasagna of bread and eggplant are a valid alternative to the classic and always obviously tasty lasagna, but these are worth trying them, they are prepared in a very short time and can be a first or a hearty single dish, they are excellent both enjoyed hot and cold (personally I prefer them warm) it is also a cheap dish, we can call it a poor dish.
Since it is made of simple ingredients, which cost little and easily available, eggplants are not fried but grilled, and we can also prepare it in advance and keep it ready when we have to bring it to the table, it is easily transportable if we want to enjoy it for a picnic, in short, what are you waiting for to do them?
Come on, I'll tell you the recipe to prepare bread and eggplant lasagna!
Ingredients
Bread (I used the classic one with the crust.)1 large eggplant 200 grams of béchamel sauce 200 grams of mozzarella50 grams of Parmesan cheese 200 grams of tomato puree1 onionsaltextra virgin olive oil basil
Procedure
First prepare the sauce, put the chopped onion and oil in a pot, brown it and add the tomato puree, season with salt and cook the sauce for about 10/15 minutes, stirring often. Cut into thin slices and grill the eggplants, if you prefer you can also fry them, but grills are undoubtedly lighter. Grease and flour a mold, I used one from plumcake, put on the bottom of the mold a ladle of sauce, one of béchamel sauce and make the base with the bread, cover the bread with eggplant, then again sauce and béchamel, and also put the mozzarella in small pieces, continue in this way until the end of the ingredients. On the surface finish with the slices of bread, cover with sauce, béchamel sauce, mozzarella and Parmesan. Cook the Lasagna of bread and eggplant in a static oven at 200 ° for about 15/20 minutes, always adjust with your own ovens for times and temperatures. A tasty first course, but also a dinner-saving recipe that is prepared in a short time. Stringy, enveloping and very tasty is a recipe not to be missed.
A dish with simple aromas and flavors!
