And today, I want to tell you about a very special appetizer. Its origins are Pugliesi, but with the passage of time, there are more and more kitchens where you can find it. But returning to this fragrant appetizer, I can tell you that in addition to being tasty, it is also extremely quick to prepare. 

If you want to start your meal in Puglia as it should be it is right to give a start from the appetizer, which boasts the characteristic of being from the sea and mountains, but with very high quality and particularity. Starting is a list of typical Apulian food, however, you can not miss the cheeses, which also vary from one part of the region to the other (just think of the typical burrata of Andria), but from which you can come out with stronger flavors, such as those of Apulian caciocavallo, cacioricotta or pecorino foggiano, as well as that of scamorza.
