Penne rigate con crema di broccoli al prosciutto e noci
Even a simple pasta with broccoli can become a healthy and a special dish! With this recipe you will be ready to prepare a single dish ideal for the zone diet! The infamous 40-30-30 is perfectly respected and you will also have a tasty dish!
INGREDIENTS:
60 g Penne
120 g broccoli
2 walnuts
100 g prosciutto
10 g extra virgin olive oil
PROCEDURE
Prepare a pot with water, bring to a boil and then cook the pasta. Meanwhile, cut the prosciutto into strips and blanch it in a non-stick pan over low heat. Meanwhile, wash and cook the broccoli in a nonstick pan or boil it in water. Once cooked, place them in a bowl and, after letting them cool, blend them with an immersion blender adding water until a cream forms. As soon as the pasta al dente is cooked, drain it and place it on a plate. Add the prosciutto, the broccoli cream, the walnuts previously peeled into small pieces, oil and salt to taste.
I found a recipe for creamy broccoli pasta in one of my Taste of Home cookbooks. (Love them!) It looked incredibly easy, so I knew I needed to give it a try. If you don’t have fresh broccoli on hand, you could substitute frozen broccoli. Love this Creamy Pasta?
