Pizza Napoletana
Pizza Napoletana is the mother of all pizzas; it is the first Pizza in the world; Original recipe from more than 300 years ago. The Napoletana pizza has been the only one for which a denomination of origin of the European Union has been recognized, called Traditional Specialty Guaranteed (or its acronym in Italian, STG, Specialità Tradizionale Garantita). UNESCO recognized in 2017 its preparation technique as intangible heritage of humanity. Verace pizza Napoletana is the first association that recognized Napoletana pizza and is the only one recognized by the Italian government. The Association is the representation of the history of the Napoletana pizza, to maintain the standard of production and quality of the pizza, defending the history of this product, not only with the production but with the quality of the ingredients.
1.Pizza
Pizza is an artisanal product so it could present small differences from pizzeria to pizzeria.
2.Dough
It is prepared only with water, salt, yeast and flour and left to stand for a minimum of 8 hours.
3.Handling
The dough disc is spread exclusively with the hands.
4.Products
The products used must be Italian flour, San Marzano tomato, extra virgin olive oil, fresh basil leaves, fior di latte, or buffalo mozzarella
5.Cooking
In the wood-fired oven at 480 C, for 60-90 seconds.
6.Cooking quality
The cornice of 1-2 cm, golden color and without or with very few bubbles and burns.
7.Appearance
With a diameter approx. 31 cm (12"), with the raised edge (cornice) and the central part, 4 mm thick.
8.Olfactory aroma
The freshly baked pizza has: The smell of fresh bread the acidic notes of tomato and fior di latte the fruity and spicy taste of the oil and garlic the herbaceous of fresh basil and oregano.
9.Taste and harmony
The pizza, with an intense and harmonious flavor, has the characteristic flavor of well-cooked bread, mixed with the sour taste of tomato, tasty mozzarella, fresh basil, bitter and spicy extra virgin olive oil and garlic.
10.Nutritional value
Napoletana pizza is the symbol of the Mediterranean diet.
